Today I will be interviewing Gail. She has been catering in central and southern Illinois for a very long time. She is my grandma and is actually who got me into this business. She has been teaching people such as myself how to cook for decades. I have six interview questions that I have asked her so others can get some insight into the world of catering.
What is your experience cooking and catering?
She started catering in high school for her best friend's parents' business. She has worked for multiple restaurants. Friends and family started asking her to cook for them since they knew how good she was. Word got around how good the cooking was so she got her food handling license so she could start doing it for a living. Since she consistently finds her schedule booked with events.
What are the most popular events that are catered?
Most common events now are for churches, anniversary, and holidays. Weddings are also a very popular event that she caters.
What are some benefits of having an event catered?
It's less stressful on the family. They can focus on spending time with the family instead of cooking. Many people do not have the skills or means to cook large meals so this can be a huge help.
How long does it take to plan out a catering event?
It really depends on the event. Weddings can take up to 6 months since figuring out the attendance and finding the supplies they want can be very difficult, especially if they are on a budget. However small events can be done in a week if they do not need much.
What advice do you have for people that want an event catered?
Know how much they want people and how many people will be in attendance. Also know if they want a sit down or buffet style dinner. This can help make the discussion go by much quicker.
What advice do you have for people that want to begin catering events?
Start small, test the water with friends and family. Ensure you have the correct certifications. You need a food handling permit and may need to get permission from other government entities. Also the equipment can be very expensive so start small and grow your equipment as you grow your business
